Vegetable soup

Here's a simple and hearty vegetable soup recipe:

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 can (14 ounces) diced tomatoes (with juice)
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach or kale (optional)

Instructions:

  1. Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add minced garlic and cook for another minute.

  2. Add Remaining Vegetables: Stir in the carrots, celery, bell pepper, zucchini, and green beans. Cook for about 5-7 minutes, stirring occasionally.

  3. Add Tomatoes and Broth: Pour in the diced tomatoes (with juice) and vegetable broth. Stir in the thyme, basil, salt, and pepper.

  4. Simmer: Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes, until the vegetables are tender.

  5. Add Greens: If using spinach or kale, stir it in during the last 5 minutes of cooking until wilted.

  6. Taste and Adjust: Taste the soup and adjust the seasoning if necessary.

  7. Serve: Ladle the soup into bowls and enjoy!
